INGREDIENTS
1 piece of TEMPTY (100g)
2 slices of sourdough bread
1 tsp butter or vegan butter
1 tbsp pesto of your choice
1 small eggplant
1 tomato
a handful of mixed baby salad
olive oil
salt
pepper
STEPS
1. Prepare eggplant by slicing it diagonally into long slices. Brush them with olive oil and pan-fry them on medium-high heat until soft and golden brown. Set aside.
2. Using the same pan, pan-fry TEMPTY using olive oil for 2-3 min on both sides. Cut TEMPTY into stripes.
3. Assemble the sandwich by firstly toasting the sourdough bread. Spread butter/vegan butter on one side and pesto on the other side.
4. Add your grilled eggplant, TEMPTY, sliced tomato, and baby salad. Enjoy!
