Poke Bowl with TEMPTY

INGREDIENTS
Rice

400g (2 cups) sushi rice

4 tbsp unseasoned rice vinegar

4 teaspoons sugar (or honey)

1 teaspoon fine sea salt


TEMPTY 2 pieces of TEMPTY (100g) vegetable oil for frying pepper salt


Toppings

1 cucumber, sliced

1 carrot, shredded

5-10 red radishes

2 avocados, peeled and sliced

1 tbsp toasted sesame seeds

seaweed salad


Dressing

4 tbsp soy sauce

2 tbsp sesame oil

2 tbsp rice vinegar

2 tsp honey


1/4 cup vegan mayo

1 tsp sriracha

STEPS

1. Cook sushi rice according to the package. Combine vinegar, sugar and salt in a small bowl and add it to cooked rice. Mix everything together and set aside.

2. Prepare TEMPTY by cutting it into bite-size pieces and frying them in a pan with a drizzle of vegetable oil.

3. For the dressing, mix soy sauce, sesame oil, rice vinegar, and honey in a small bowl.

4. To assemble, place a few spoonfuls of rice into a medium bowl. Top the rice with TEMPTY, avocado, cucumber, carrots, radish, seaweed salad and toasted sesame seeds. Pour dressing over the bowl. Lastly, drizzle some sriracha mayo over the top. Enjoy!
